Winter warming soup 🥣🍅🫑🍆🧄🥕
It’s the start of a New Year New Me and everyone is jumping on the band wagon of healthy eating and already fed up of the Christmas chocolate 🙅🏼♀️
An easy way to get plenty of vegetables -and make use of the leftover vegetables in bottom of the fridge- this easy to make recipe. It’s super easy and really delicious 🙂perfect for these cold wintery days 🥶
What you will need..
3x carrots,
a handful of cherry tomatoes,
1x courgette,
2x red onion,
2x peppers
2-3x cloves of garlic.
You could use aubergines, potatoes, butternut squash or anything you have leftover or you’re wanting to use up!
🫘I used a tin of Chick peas 🫛as a source of protein but you could add kidney beans 🫘 or butter beans as an alternative!
Add a good drizzle of Extra virgin Olive oil and a teaspoon of mixed herbs and a teaspoon of salt. (You could add more or less depending on your preference)
Roast all your veggies on a baking tray in the oven for ~40 minutes @ 200 degrees.
Make ~500-600ml vegetable stock with a vegetable stock cube and add your vegetables to this. I used a soup maker to blend mine but you can use a handheld blender or an alternative blender you have at home 🥣🥫blend until smooth and season to taste 👩🏼🍳 (I added some chilli flakes and it was tasty 😋)
