Winter warming soup ๐Ÿฅฃ๐Ÿ…๐Ÿซ‘๐Ÿ†๐Ÿง„๐Ÿฅ•

Itโ€™s the start of a New Year New Me and everyone is jumping on the band wagon of healthy eating and already fed up of the Christmas chocolate ๐Ÿ™…๐Ÿผโ€โ™€๏ธ

An easy way to get plenty of vegetables -and make use of the leftover vegetables in bottom of the fridge- this easy to make recipe. Itโ€™s super easy and really delicious ๐Ÿ™‚perfect for these cold wintery days ๐Ÿฅถ

What you will need..

  • 3x carrots,

  • a handful of cherry tomatoes,

  • 1x courgette,

  • 2x red onion,

  • 2x peppers

  • 2-3x cloves of garlic.

You could use aubergines, potatoes, butternut squash or anything you have leftover or youโ€™re wanting to use up!

๐Ÿซ˜I used a tin of Chick peas ๐Ÿซ›as a source of protein but you could add kidney beans ๐Ÿซ˜ or butter beans as an alternative!

Add a good drizzle of Extra virgin Olive oil and a teaspoon of mixed herbs and a teaspoon of salt. (You could add more or less depending on your preference)

Roast all your veggies on a baking tray in the oven for ~40 minutes @ 200 degrees.

Make ~500-600ml vegetable stock with a vegetable stock cube and add your vegetables to this. I used a soup maker to blend mine but you can use a handheld blender or an alternative blender you have at home ๐Ÿฅฃ๐Ÿฅซblend until smooth and season to taste ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ (I added some chilli flakes and it was tasty ๐Ÿ˜‹)
